My Kitchen

Come sit with me and have some coffee. Cream or sugar? I think in every kitchen should be a nice window to look out, while cooking dinner. My REAL kitchen window, I can watch the sunset. Some days it's so pretty. But I like my virtual window. The tree looks so mysterious. Kinda like a storm is brewing. That is when I do my best cooking.

I hope here, to be able to share with you, some of my most favorite recipes. Christmas is a fun time in my kitchen. That's when the baking starts. It's a family tradition, I started this when my sisters were little. I think this year will be our 23nd annual bakeathon. We make many cookies, candies and breads. I think my favorite part is just spending quality time with my sisters. If you would like to share a recipe with me...please use the email icon in the hallway. Something good is always cooking! The only thing we need here now is a virtual aroma! Who knows, maybe one day....

As the weather cools...it's time to start making delicious foods that will warm your insides. Some of my most favorites to make during this season is Shepherds Pie. I don't really have a recipe for it. But will try to share with you.....It's a Scottish meal. Also know as Cottage Pie. I have substituted different meats with it. Left over pot roast and round steak (simmered lots). Use your imagination....

Shepherd's Pie (learned from my mother in law)

1 LB ground beef
1 beef gravy, (you can make your own)
I onion
1/4 pound mushrooms
Garlic/Onion Powder
Carrots (about 6 of them)
Peas (1 can, drained)
6 Potatoes
Cheddar Cheese

Ground the beef with onions and mushrooms, season with garlic/onion power, drain. While grounding the beef, Boil the potatoes, steam the carrots. When beef is done, put in a casserole dish mix with gravy. Add steamed carrots and peas. After potatoes are boiled, mash them. Cover meat and veggie mix with mashed potatoes and top with cheddar cheese. Bake for about 20 minutes at 350o. Serve with a salad and French bread.

Oatmeal Cookies

1/2 cup butter
1 cup sugar (mix)
1 egg
1/2 teaspoon vanilla
3/4 cup flour
1/2 teaspoon soda
1/4 teaspoon salt
1 1/2 cups rolled oats
1/2 cup raisins, nuts, coconuts, whatever you would like to add....(optional)

Preheat oven to 375. In mixing bowl, cream butter and sugar. Beat in egg and vanilla. Stir in remaining ingredients until mixed. Drop by rounded teaspoonsful, 2 inches apart, onto ungreased baking sheets. Bake 12-15 minutes or until golden brown.
